Hearty January breakfast: Blueberry pancakes with maple syrup

The only January Blues that we will allow are packed full of antioxidants and vitamins, in the form of delicious blueberries. This hearty breakfast recipe will set you up for the day and will be popular with all the family.

To make blueberry pancakes:

Ingredients:

150g blueberries
250g plain flour
2 tsp baking powder
½ tsp bicarbonate soda
¼ tsp salt
25g butter, melted and cooled
350ml milk
1 egg, beaten
1 tsp vanilla extract
1/2 lemon, juiced
 
Method:

Mix flour, baking powder, bicarbonate of soda and salt in a large bowl, making a well in the centre. Add butter, milk, egg, vanilla extract and lemon juice. Mix until it forms a smooth batter and add half the blueberries.
 
Heat cooking spray in a pan and add half a ladle for each pancake, cooking several at a time, and turning with a spatula to cook both sides.
 
Serve with the remaining blueberries and top with lemon juice, maple syrup or your favourite toppings
